Low sugar, no butter. It’s great. 30m prep, 1h baking.
Ingredients
1¾ cups flour (I use rice flour)
½ teaspoon salt
3 teaspoons baking powder
1 cup mashed bananas (~3 bananas)
¼ cup melted coconut oil (instead of butter)
¼ cup (4 tbsp) brown sugar
2 large eggs
½ cup walnuts
Steps
- Preheat oven to 350 degrees
- Mash bananas in a large bowl. I use a spatula or pestle.
- Microwave coconut oil until it is in liquid form — I do this in a glass measuring cup
- Pour brown sugar into the coconut oil, mix together.
- Put 1 egg at a time into the oil/sugar, mixing as you go.
- Add coconut oil mix to the mashed bananas, mix together
- Dry stir the flour, salt, and baking powder together.
- Add flour mix to mashed banana mix.
- Chop walnuts, add to the mix and stir.
- Grease a bread pan. Pour the entire mix in.
- [Optional] Sprinkle the top with cinnamon, chopped walnuts, dried oats. If you want to get fancy, run a knife blade in a zigzag pattern after you add cinnamon.
- Bake for 50–60m.
